咖啡的种类主要分为三大类:阿拉比卡、罗布斯塔和利比里亚,但在市场上流通的多是前两种。不论何种都有其优缺点,使用的目的与用途亦不尽相同。咖啡属植物约有40种,但能够生产出具有商品价值咖啡豆的仅有这三大原生种。
阿拉比卡种
阿拉比卡种的原产地是埃塞俄比亚高原。初期主要作为药物食用,13世纪培养出烘焙饮用的习惯,16世纪经由阿拉伯地区传入欧洲,进而成为全世界人们共同喜爱的饮料。所有这些咖啡中,阿拉比卡占75%~80%,它的绝佳风味与香气,使它成为这些原生种中唯一能够直接饮用的咖啡。但其对于干燥、霜害、病虫害等抵抗力过低。
罗布斯塔种
在非洲刚果发现耐叶锈病品种,更强于阿拉比卡对抗病虫害。罗布斯塔具有独特香味与苦味,只占混合咖啡2%~3%,但整杯就成了罗布斯塔味。他一般被用于速溶、灌装液体等工业生产上,其含量远高于其他品系,是一种适合制造工业级别产品的大宗供应者。
利比里亚種
西部非洲为利比里亚種咖啡の原始產地,对於各種環境皆有適應能力,但對於葉銹病不耐受,因而僅在西非部分國家(如利未亞、科特迪瓦等)国内交易買賣或栽培供研究使用。在世界市場上,大約65%為Arabica, 35%為Robusta.
根据ICO(国际coffee组织)的统计,在全球市场流通中的每一杯酒中,有四分之五来自Arabica, 而剩下的则来自Robusta. Arabica coffee beans are characterized by their long and thin shape, while Robusta coffee beans are rounder and more compact in appearance.
The world's largest producers of these three species include Brazil, Vietnam, Ethiopia and Colombia. The demand for high-quality Arabica continues to grow as consumers seek out better-tasting beverages with unique flavor profiles.
